Rice flour is a fine flour, which is made from whole grain rice and used for making various sweets. In Ayurvedic and Asian cuisine, it is used as a binder and for making dough. Rice flour contains no gluten, and it therefore only suitable for pastry and bread, but can replace up to 20% of the grain flours. It is used in gluten-free diets.
